Baby-Mama Lunch: Quinoa & Broccoli Salad

Here is a salad that is easy to make, full of good for you food.  Quinoa is a grain that originates from South America.  It is high in protein, magnesium, vitamin B2, iron, phosphorus and zinc.  It can be cooked like rice, only it cooks faster (2 C of water for every Cup of grain).  I have cooked it in my rice cooker or on the stove.  Bring the quinoa to a boil and then simmer for 10 to 15 minutes.

Quinoa-Broccoli Salad –This is a great one pot dish.  Cook the broccoli and the quinoa together and then add what you want to make it a salad.  This is a highly nutritious salad for you and your 9 month old.

  • 1 C quinoa
  • 2 C water
  • 1 C broccoli, cut into large pieces
  • 1/4 C mango
  • 1/4 C cucumber, chopped
  • 1/4 C bell pepper, chopped
  • 1/4 C cherry tomatoes, cut in half
  • 1/4 C avocado
  • sprinkling of sunflower seeds, pumpkin seeds, sesame seeds (for mom’s salad – if you have introduced these seeds to your baby you may want to grind them for this salad)

Dressing – for Mom’s salad – this dressing can be added to your baby’s salad after citrus has been introduced to your baby at one year of age , but omit the salt

  • 4 T lemon juice
  • 4 T flax seed oil
  • pinch each of salt, pepper, thyme and oregano
Place the quinoa and water in a pot and bring to a boil

When the quinoa begins to boil, place a steamer basket with the broccoli on top of the quinoa.  Put the lid on the pot and reduce heat.  Quinoa will simmer while broccoli steams.  The minerals from the broccoli will be absorbed by the quinoa for a nutritious boost!

When the broccoli can be pierced with a fork and the quinoa is light and fluffy, dump both the broccoli and quinoa into a large salad bowl.

PUt some of the salad into a small bowl for your baby, add mashed avocado, pieces of mango and any soft vegetables that your baby likes.  In the large bowl add the veggies and salad dressing.  Enjoy!
