What a great lunch idea - quick & easy to make!

Here is a great idea for lunch for you and your toddler.

It’s often difficult to think beyond the grilled cheese sandwich for you and your toddler, but I find that the Quesadilla is just as quick, just as easy and much healthier as you can fill it full of veggies.

This is great for a child over one-year old, because it contains tomatoes which is highly allergenic.

The Baby-Mama Vegetable Quesadilla

  • 2 whole grain tortillas

    Use as many vegetables as you can find in your fridge!

  • Mild salsa
  • Dry pressed Cottage cheese (optional)
  • Chopped vegetables (peppers, onions, zucchini, spinach)
  • Leftover chicken (optional)
  • Grated cheddar cheese
  • olive oil

Lightly coat a frying pan with a little olive oil and place on a medium burner.  Place one tortilla in the frying pan.  Spoon salsa over the tortilla & sprinkle with dry-pressed cottage cheese if you are using it.  Layer your vegetables, leftover chicken (if using) and sprinkle with cheese.  Place a lid on the frying pan and wait until cheese just starts to melt.  Place the second tortilla on top and replace lid on frying pan.  When cheese is melted and you cannot lift the top tortilla, turn the quesadilla onto a plate.  Cut into pieces.  Let cool to share with your little one for lunch!  If your toddler is really young, you can cut the  quesadilla into really small pieces that can be stabbed with a fork or fed to your child.  An older toddler may be able to manage larger pieces of the quesadilla – you are the best judge of this!
