These quinoa cakes make a great lunch for mom & baby!

I like to cook up quinoa because it is nutritious and it makes a great salad (see here!).  But I often find that there is leftover quinoa, so I recently I made up some quinoa cakes.  I used this recipe from Whole Foods as guidance, but I did change it up a little;  I found that one egg just didn’t keep them together and I used different vegetables.

Because whole eggs are used, these are good when your baby is one year old.

These were tasty, healthy, full of veggies and my little guy loved them, as did I.  They are great to take on-the-go for your little one.  I had some leftovers the next day which I broke into smaller pieces and added them to a green salad.  Also delicious!

Quinoa Cakes

  • 1 Tbsp finely minced onion
  • 1 clove of garlic, grated or finely minced
  • 1/2 lg carrot, grated
  • 1/2 small zucchini, grated
  • 2 large leaves of fresh spinach, chard or kale, chopped finely
  • 1/2 T olive oil
  • Leftover cooked quinoa (1 1/2 C)
  • 1 tsp baking powder
  • 4 Tbsp whole grain flour
  • zest of one lemon, chopped fine (optional)
  • 2 eggs, beaten
  • olive oil spray or in a bowl with brush

Preheat oven to 400 deg. F.  In a saucepan saute onion, garlic, carrot, zucchini and spinach with 1/2 T olive oil.  Saute until vegetables are soft, put aside and let cool.  In a large bowl combine quinoa, baking powder, whole grain flour, lemon zest and eggs.  Add cooked vegetables and stir until well combined.  with your hands form the mixture into 8 balls.  Place balls on a baking sheet and flatten gently with your hands.  Brush or spray with olive oil.  Place in oven and bake for 10 minutes.  After 10 minutes, turn over gently and brush or spray tops with olive oil, bake for 10 more minutes, until edges are brown.  Serve!

You can serve these quinoa cakes with yogurt mixede with dill and lemon juice, which makes a great dip or sauce!
