This month I talk about the importance of green vegetables.  One way I get the greens in is to make up the ‘Sham*Rock* Smoothie, also known as the Top ‘O’ The Morning Smoothie!  It’s great for breakfast or a snack.

In honour of St. Patrick’s Day, I had this smoothie tested by Paddy O’Furniture and Paddy O’Lantern and they loved it!!!  And my husband did too 😉

If you use rice milk, this smoothie is good for a child 10 months and up!

The Sham*Rock* Smoothie

All of this goodness blends into a delicious smoothie!

  • 1 +1/2 banana (frozen or fresh)
  • 1 C chopped mango (frozen or fresh)
  • 1/2 C plain Organic Yogurt (3.8%)
  • 1 C almond milk (or soy or rice or cow’s)
  • 1 handful of loose baby spinach (approx. 1/2  C)
  • 5 to 15 leaves of fresh mint
  • 1 Tbsp ground flax seed
  • 1 tsp nutritional yeast (optional)

Combine all of the ingredients in a blender and combine on high until smooth.  You should not see any flecks of the leaves, the smoothie will be a nice minty green colour.  A great way to add extra veggie to you and your child’s diet.  Your child will never know!

  • Start with 5 mint leaves & add more according to taste, I used 10 and it wasn’t minty, but had a lovely minty aftertaste
  • Ground flax is an amazing source of fibre
  • Nutritional Yeast is high in B vitamins. the feel good vitamins!

Happy St. Patrick’s everyone!

Sounds great, Laurie! As you know, I’m a huge fan of green smoothies 😉 Looking forward to this one once I’m eating bananas again!
