Quick Beefy Broccoli Dinner

Here is a dinner that was inspired by a Martha Stewart mini magazine Everyday Food (Sept. 2009).  You can find these small mags by the cash at the grocery store.  This was a hit at our house,especially because my son loves wrapping food up in the flatbread, a side benefit of the rotis he receives at daycare!

Beefy Broccoli Dinner with Homemade Flatbread

My son isn’t liking broccoli these days, so I followed my own advice to other moms’ about vegetables; serve vegetables 3 ways: hidden in the food, obvious in the food and raw.  I like this idea because they get the nutrition from the hidden veggies, they get to see the veggies & maybe try them and they can also try them raw, because who knows, maybe they will like it that way?!  Don’t forget to peel & chop the stem of the broccoli, it’s good for you too!

This is good for a child 10 months and over


  • 1+ 1/2 C whole wheat or spelt flour
  • 1+1/2 C all purpose flour or light spelt flour
  • 2 t salt
  • 1/4 C olive oil
  • 3/4 C water
  • extra flour

Beefy Broccoli

  • 1 crown of broccoli, chopped
  • 3 sundried tomatoes
  • 1/2 onion, chopped fine
  • 1 clove of garlic, chopped fine
  • 1 T olive oil
  • 1 t basil
  • 1/2 t salt
  • 1 lb ground beef
  • 1 T worchesteshire Sauce + water to make 1/4 C
  • water

Yogurt Dip – in a small bowl combine & set aside:

  • 1 c plain yogurt
  • 1 Tbsp lemon juice
  • 1 clove garlic, chopped

Optional Extras: chopped tomatoes, chopped cucumbers, fresh chopped spinach and basil…

In a large bowl combine flours & salt.  Add olive oil and water and stir until a dough forms.  If it is too sticky, add more flour by the Tablespoon, if it is too dry add more water by the teaspoon.  When a dough has forms, put bowl aside & let sit while you prepare the beef.

Take 1/2 of the broccoli and the sundried tomatoes and chop until very fine in the food processor.  Put olive oil in a frying pan and add onion and garlic.  Cook over medium heat until soft (3 min.).  Add the finely chopped broccoli and tomatoes and basil to the frying pan, cook until broccoli is a bright green.  Add the ground beef and worcesteshire-water mix and cook until the beef is no longer pink.  Simmer on low heat until the flatbread is done.

Take the flatbread dough and diving into 8 small balls.  Put flour on your clean counter and roll out each ball into a flat round.  Heat a clean frying pan on a  hot burner.  Add one dough disc to the pan.  When bubbles form (2 min), turn over and cook second side.  They are done when they are puffy with browned spots.

Serve the broccoli beef with the flatbread and yogurt.  You can spread the yogurt on the flatbread add the beef-broccoli and the extra veggies.  You can also serve the beef over rice, rather than flatbread.
