Make it Taco Night!

We love making tacos in our house. I think it is a great way to serve veggies in a creative way.  It is amazing how kids will eat veggies when they are wrapped in a tortilla!

I make up a jar of my own taco seasoning to have on hand.  This is much better than the packets that you find in the grocery store.  Not only is it easy and cheap to make, but there are no additives.

Here are the facts from some quick and dirty research I did on a popular Taco Seasoning packet you can find on the shelf in the local grocery store:

  • 2 tsp of the seasoning contains 560 mg of sodium = 23%.  THAT IS A LOT OF SODIUM and there is no way you only use 2 tsp of the seasoning packet!  For more on sodium go here!
  • Ingredient list: maltodextrin, salt, chili pepper, onion powder, spice, monosodium glutamate, corn starch, yellow corn flour, partially hydrogenated soybean oil, silicon dioxide (anticaking agent), natural flavor, ethoxyquin (preservative).
    • maltodextrin = a sugar additive
    • spice = ?  what kind of spice ?
    • Partially hydrogenated soybean oil = remember anytime you ‘hydrogenate’ and oil it becomes a trans fat
    • silicon dioxide = common anit-dryin/caking additive
    • monosodium glutamate = MSG = sodium
    • ethoxyquin = preservative

You can find recipes for Taco Seasoning all over the net, below is my recipe and one for beef tacos.  Keep the seasoning in an airtight container and use accordingly.   Next week I will share my recipe for Fish Tostadas!

Taco Seasoning

  • 2 Tbsp chili powder
  • 1 tsp garlic powder
  • 1/2 tsp red pepper flakes
  • 1/2 tsp oregano
  • 2 tsp paprika
  • 3 tsp cumin
  • 2 tsp sea salt
  • 1 tsp black pepper

Beef Tacos

  • 1/2 Tbsp Olive oil
  • 1 onion, chopped fine
  • 1 lb beef
  • 1 tbsp Taco Seasoning
  • 2 Tbsp tomato paste
  • 2 tbsp water
  • 1/4 C frozen corn
  • 1/2 C finely chopped spinach

In a frying pan heat olive oil and saute onion, until soft.  Add the ground beef  and taco seasoning.  Saute beef over medium heat until mostly cooked.  Add water, tomato paste, corn and spinach and continue cooking beef.  When beef is cooked, taste it, if you like it spicier, add more seasoning.  Layer a tortilla with beef  and your other choices of toppings and enjoy!

  • Optional Toppings:
    • Avocado
    • Chopped lettuce
    • Chopped peppers
    • Chopped tomatoes
    • Plain Yogurt or Sour Cream
    • Shredded Cheddar cheese
    • Refried Beans
    • Soft or hard tortilla or taco shells

    Your taco seasoning recipe is AWESOME!!! I’ve tried to emulate the Lawry’s mix before and failed. This is actually MUCH BETTER than the store-bought mixes. You are my hero.
