Ta-da! Fast Fish Tostadas!

Last week I told you how to make a great taco seasoning mix and beef tacos, from scratch!  This week I will share with you the new favourite meal around our house…  Fish Tostadas.

We have been making these almost every week lately because they are a great way to incorporate fish into our diet, they are easy and fast to make and they are delicious! You can make a tostada into a taco if you would rather, but there is something to be said for layering delicious veggies and fish on a crispy tortilla.

Fish Tostadas

  • 1 – 2 Tbsp homemade Taco Seasoning Mix
  • 3 large fillets of tilapia (1/2 thawed), cut into pieces the size of a playing card
  • One frying pan that can go from stove top to oven and is big enough to accommodate all of the fish. (ideal = cast iron)
  • small corn tortillas
  • Your favourite toppings:
    • Sour Cream or plain yogurt
    • Salsa
    • Refried Beans
    • Chopped lettuce
    • Chopped tomatoes
    • Chopped peppers
    • Shredded Cheddar Cheese
    • Avocado

Get ready:  Using the fish half thawed makes it easier to work with.  Preheat your oven to 375 deg. and make sure one rack is low and the other is in the middle.  Heat a frying pan and 1 tbsp of olive oil on the stove.  Spread the Taco Seasoning on a large plate.

  • Dip one side of the fish in the taco seasoning and place spice-side down in the hot frying pan, until all of the fish is in the pan.
  • Cook the fish for 3 minutes then turn over the fish, using tongs.
  • Move to the hot oven, on the middle rack
  • On a baking sheet lay out the tortillas and place in the oven for 3 minutes, on the lower rack, until crispy.
  • Check every 5 minutes to see if the fish is cooked (it doesn’t take long).  You will know it is done if the fish flakes easily.

Once the fish is done, remove from oven.  On the crispy tortilla, layer your ingredients.  Top with the fish.  Tada!  Delish!  Now, isn’t that fast and easy?
