Sweet, Sweet Sugar… making us fat

It’s newsletter time!  And I think I have figured out a way to explain how we store sugar as fat. Check it out at my newsletter blog.

Sugar commonly comes from sugar beets, which makes these vegetables really sweet.  The healthiest way to get that sugar is right from the beet itself.  If you are looking for something savoury and sweet from the BBQ look no further than my Grilled Beet Salad.  I cooked up this easy and delicious meal for myself on the fly one night and got admiring glances from my husband and son.  They each stole a little of the salad and put it on the menu for a future dinner.  You can use red beets, but I like the yellow/golden ones because they don’t stain my counters!

Grilled BBQ Beet Salad

  • 3 Yellow beets, sliced
  • 2 zucchini, sliced
  • 1 cup fiddle heads or asparagus or other green vegetable
  • 1 Tbsp olive oil
  • 1/2 Tbsp tamari
  • 1/4 C goats cheese
  • salt & pepper

Toss the beets, zucchini and fiddleheads in the olive oil and tamari.Place on a hot BBQ and season with salt & pepper.  Keep the remaining olive oil & tamari in a bowl and occasionally brush it over the vegetables.  Turn the vegetables to make sure they don’t burn.  They are done when they reach a consistency that you like, not too hard, but not too soft.  Place in bowl, toss with remaining ‘dressing’ and goat cheese.  Enjoy!
